Ingredients


Makes: 4 servings
  • 2 tsp (10 ml) vegetable oil
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 2 red peppers, diced
  • 1 Tbsp (15 ml) Cuban Seasoning
  • 1 tsp (5 ml) Fajita Seasoning, optional
  • 1 can (19 oz /540 ml) diced tomatoes, including liquid
  • 1 can (19 oz /540 ml) kidney beans, drained and rinsed
  • 1 C (250 ml) white rice, uncooked
  • 1 tsp (5 ml) Worcestershire sauce
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste
  • 2/3 C (160 ml) grated low-fat cheddar cheese – optional
  • Chopped cilantro - optional

Preparation


 
  • In a large Fry Pan, or Everything Pan, heat oil over medium heat. Add onion, garlic, and peppers. Cook for 5 minutes, or until onions are translucent.
  • Stir in Cuban Seasoning and Fajita Seasoning and continue to cook for 1 minute.
  • Add tomatoes, beans, and rice. Stir in Worcestershire sauce. Bring to a boil, reduce heat to medium-low, cover, and simmer for about 20 minutes, or until most of the liquid has evaporated and rice is cooked. Season with Salt and Pepper.
  • Garnish with cheddar and cilantro, if desired.

Tip


 

Tip: Makes a great filling for burritos. Fill tortillas, sprinkle with cheddar and top with prepared Salsa, if desired. Roll and serve!
