Preparation


 
  • Combine first 4 ingredients in a Multipurpose Pot - 8 C over medium-high heat.
  • Reduce heat and simmer for 20 minutes. Cool slightly.
  • Purée in blender or food processor until smooth.
  • Season to taste with Salt and Pepper. Serve chilled.

Tip


 

Tip: Blend with sour cream before serving, or serve chilled soup with a dollop of sour cream.
