Ingredients

Gazpacho Seasoning
1 can (28 oz/796 ml)
diced tomatoes
14 cup
red wine vinegar
2 tbsp
olive oil
12 cup
water

Topping suggestions (optional): Diced cucumber, chopped chives, halved or quartered cherry tomatoes

Preparation
  1. In a blender or food processor, purée seasoning with tomatoes, vinegar, and oil.
  2. Gradually pulse in water to desired consistency.
  3. Chill at least 2 hours before serving; garnish with toppings as desired.
Tips

Replace canned tomatoes with 3 12 cups fresh, peeled, diced tomatoes.

Perfectly Balance Your Plate

Serve with 4.5 oz (130 g) cooked shrimp and 1 small grilled pita.
