Ingredients


Makes: 4 servings
  • 1/2 C (125 ml) tahini paste
  • 1/4 C (60 ml) water
  • 2 Tbsp (30 ml) lemon juice
  • 2 tsp (10 ml) Lemon Dilly Dip Mix
  • 1/2 English cucumber
  • 4 C (1 L) mixed greens
  • 2 C (500 ml) cooked quinoa
  • 2 C (500 ml) shredded red cabbage
  • 1 C (250 ml) julienned carrots
  • 1 recipe prepared Falafels

Preparation


 
  • For the sauce, purée tahini, water, lemon juice, and dip mix in a blender until smooth.
  • Using the 4-in-1 Mandoline, slice cucumber into thin ribbons.
  • Divide cucumber ribbons, mixed greens, quinoa, cabbage and carrots between 4 bowls. Top each with 3 falafels. Drizzle with sauce.

Tip: Use a 4-in-1 Mandoline to slice the cucumbers into ribbons, shred the cabbage, and julienne the carrots.
