Ingredients


Makes: 4 Servings
  • 1/2 C (125 ml) uncooked quinoa, rinsed
  • 1 1/2 C (375 ml) hot water, divided
  • 1 pkg Veggie Burger Mix (Pkg of 2)
  • 1/2 lemon
  • 10 oz (283 g) skinless salmon fillet, diced, about 2 cups
  • 2 Tbsp (30 ml) oil
  • 4 C (1 L) baby kale or spinach
  • 4 buns, split and toasted

Preparation


 
  • Place quinoa in Multipurpose Steamer; stir in 1 cup hot water. Microwave on high, uncovered, until tender and water has been absorbed, 12–15 min.
  • In a bowl, combine burger mix with ½ cup hot water. Using the 2-in-1 Citrus Press, squeeze in 3 tbsp juice from lemon. Add salmon; stir until combined. When cooked, stir in quinoa.
  • Preheat large fry pan over medium heat.
  • When hot, add oil; scoop batter onto pan, making four burgers. Lightly press and flatten into shape. Cook until golden brown, 3–5 min per side.
  • Place kale on bottom of buns. Top each with patty and toppings.

Tip


 

Topping Suggestions (optional): sliced tomatoes, salsa, grated carrots or beets, prepared Big Burger Sauce.

Tip: Go veggie and swap salmon for 2 - 540 ml cans of lentils, drained and rinsed.
